Mexican Style Chicken and Red Rice.

Transport your taste buds with this Mexican style chicken and red rice recipe, featuring our own Arroz Rojo Mexican Inspired Rice. A quick and easy way to bring the fiesta to your dinner table!

You'll need...
  • 1 tray Veetee Arroz Rojo Mexican Inspired Rice
  • 100g black beans
  • 350g chicken breast
  • 1 tbsp tomato concentrate
  • 1 tsp sugar
  • 100ml chicken stock
  • 1.5 tbsp lime juice
  • 1 tbsp olive oil
  • 2 garlic cloves, minced
  • ½ onion, crushed
  • 1 tsp fresh coriander
  • 1.5 tsp cumin powder
  • 1.5 tsp paprika
  • 1/4 tsp cayenne pepper
  • 1 tsp salt
  • 1/2 tsp black pepper
The how...
  1. To a bowl, add all the seasoning for the chicken marinade and mix well.
  2. Cut the chicken into small pieces and add to the seasoning to coat.
  3. Heat 1 tbsp oil in a frying pan over medium to high heat. Cook the chicken for 5 minutes, then remove and set aside.
  4. In the same pan, add the tomato concentrate, sugar and chicken stock. Stir and bring to the boil, scraping the bottom of the pan to deglaze.
  5. Return the chicken back into the sauce and boil until the sauce has slightly thickened. Transfer the chicken to a serving dish.
  6. In the same pan, heat 1 tsp oil over medium heat. Fry the black beans for 1 minute, then add the rice and fry for another minute.
  7. Plate up and serve immediately. Enjoy!
