You'll need...
- —1 tray Veetee Arroz Rojo Mexican Inspired Rice
- —100g black beans
- —350g chicken breast
- —1 tbsp tomato concentrate
- —1 tsp sugar
- —100ml chicken stock
- —1.5 tbsp lime juice
- —1 tbsp olive oil
- —2 garlic cloves, minced
- —½ onion, crushed
- —1 tsp fresh coriander
- —1.5 tsp cumin powder
- —1.5 tsp paprika
- —1/4 tsp cayenne pepper
- —1 tsp salt
- —1/2 tsp black pepper
The how...
- To a bowl, add all the seasoning for the chicken marinade and mix well.
- Cut the chicken into small pieces and add to the seasoning to coat.
- Heat 1 tbsp oil in a frying pan over medium to high heat. Cook the chicken for 5 minutes, then remove and set aside.
- In the same pan, add the tomato concentrate, sugar and chicken stock. Stir and bring to the boil, scraping the bottom of the pan to deglaze.
- Return the chicken back into the sauce and boil until the sauce has slightly thickened. Transfer the chicken to a serving dish.
- In the same pan, heat 1 tsp oil over medium heat. Fry the black beans for 1 minute, then add the rice and fry for another minute.
- Plate up and serve immediately. Enjoy!
